Great to satisfy a sweet craving, for after a work-out, or just when you need an extra burst of energy, you’ll make these delicious energy balls over and over. And if you have kids, you may want to plan a hiding place for them now.
Coconut Almond Energy Balls
Ingredients
- 1 c almond butter
- 1/2 c coconut flour
- 1/4 cup crushed dehydrated strawberries
- 1/2 cup dried dates
- 1/2 cup water
- 3 Tbsp shredded coconut
- 3 Tbsp crushed slivered almonds
Instructions
- Blend dates and water in a food processor or Vitamix until pureed.
- Add almond butter, coconut flour, dehydrated strawberries, and date puree to mixing bowl. Mix until an even consistency.
- Form about a dozen balls and place in freezer for 15-20 minutes.
- Meanwhile, preheat oven to 425 degrees.
- Place a pan with shredded coconut and slivered almonds in the oven for 2-2 1/2 minutes until toasted.
- Remove energy balls from freezer and roll in the toasted mixture.
Store in an airtight container at room temperature or in the refrigerator for 1-2 weeks. May also store in an airtight container in the freezer for 1-2 months.
