Coconut Almond Energy Balls

  • 1 c almond butter
  • ½ c coconut flour
  • ¼ cup crushed dehydrated strawberries
  • ½ cup dried dates
  • ½ cup water
  • 3 Tbsp shredded coconut
  • 3 Tbsp crushed slivered almonds
  1. Blend dates and water in a food processor or Vitamix until pureed.
  2. Add almond butter, coconut flour, dehydrated strawberries, and date puree to mixing bowl. Mix until an even consistency.
  3. Form about a dozen balls and place in freezer for 15-20 minutes.
  4. Meanwhile, preheat oven to 425 degrees.
  5. Place a pan with shredded coconut and slivered almonds in the oven for 2-2 1/2 minutes until toasted.
  6. Remove energy balls from freezer and roll in the toasted mixture.
  7. Store in an airtight container at room temperature or in the refrigerator for 1-2 weeks. May also store in an airtight container in the freezer for 1-2 months.
