Paleo Apple Pie Muffins

- 2 cups of Almond Flour
- 1 teaspoon of Baking Soda
- 2 teaspoons of Apple Pie Spice
- 3 eggs
- ¼ cup of Maple Syrup
- ¼ cup of melted Coconut Oil
- 1 large Apple, grated, skin on
- Preheat the oven to 350F.
- In a medium-sized bowl, sift the almond flour, baking soda, and apple pie spice. Set aside.
- In a large bowl, add the eggs, coconut oil, and maple syrup and whisk well.
- Add the almond flour mix to the egg mixture and gently mix together. Over mixing will result in tough muffins.
- Add the grated apples and gently fold it in.
- Line a muffin tin with silicone or paper liners and fill with the batter up to ¾ cup.
- Bake for about 20 to 25 minutes, or until the top is golden brown and a toothpick inserted in the
- center comes out clean.
- Let the muffins cool in the pan for 10 minutes and then let it finish cooling on a wire rack.
1. These muffins freeze very well. Just zap in the microwave for a minute and you a have a delicious breakfast on the go.
2. Instead of apple pie spice, you may use the following spices:
1 teaspoon of Cinnamon
½ teaspoon of Allspice
½ teaspoon of Nutmeg
