Gluten-free Instant Pot Spicy Sausage and Rice

- 1 tablespoon olive oil
- 8 ounce Kielbasa sausage, cut into ¼ inch slices
- 1 medium onion, chopped
- 1 medium pepper (green, red, yellow or a combination), diced
- 1 (14 ½ ounce) can diced tomatoes with liquid
- 1 cup chicken stock
- 1 tablespoon steak sauce
- 3 bay leaves
- 1 tablespoon sugar
- ½ teaspoon hot pepper sauce
- 1 cup uncooked long grain rice
- Using your Instant Pot's sauté mode, add oil, peppers, and onion, cooking until slightly tender.
- Add sausage and remaining ingredients to the Instant Pot.
- Set the Instant Pot to manual pressure for 5 minutes.
- At the end of the pressure cycle, allow a natural release of pressure for 5 minutes and then a quick release for any remaining pressure.
- Serve with additional peppers and/or cilantro or parsley.
- Serves 4
