Gluten-free Instant Pot Spicy Sausage and Rice

Ingredients
  • 1 tablespoon olive oil
  • 8 ounce Kielbasa sausage, cut into ¼ inch slices
  • 1 medium onion, chopped
  • 1 medium pepper (green, red, yellow or a combination), diced
  • 1 (14 ½ ounce) can diced tomatoes with liquid
  • 1 cup chicken stock
  • 1 tablespoon steak sauce
  • 3 bay leaves
  • 1 tablespoon sugar
  • ½ teaspoon hot pepper sauce
  • 1 cup uncooked long grain rice
Instructions
  1. Using your Instant Pot's sauté mode, add oil, peppers, and onion, cooking until slightly tender.
  2. Add sausage and remaining ingredients to the Instant Pot.
  3. Set the Instant Pot to manual pressure for 5 minutes.
  4. At the end of the pressure cycle, allow a natural release of pressure for 5 minutes and then a quick release for any remaining pressure.
  5. Serve with additional peppers and/or cilantro or parsley.
  6. Serves 4
