You might think that eating a Paleo diet means you won’t be able to enjoy a sweet treat. The following recipe is a great option for those days when you do. They also make a good breakfast muffin and will freeze well.
Paleo Apple Pie Muffins Recipe
Ingredients
2 cups of Almond Flour
1 teaspoon of Baking Soda
2 teaspoons of Apple Pie Spice
3 eggs
¼ cup of Maple Syrup
¼ cup of melted Coconut Oil
1 large Apple, grated, skin on
Instructions
1. Preheat the oven to 350F.
2. In a medium-sized bowl, sift the almond flour, baking soda, and apple pie spice. Set aside.
3. In a large bowl, add the eggs, coconut oil, and maple syrup and whisk well.
4. Add the almond flour mix to the egg mixture and gently mix together. Over mixing will result in tough muffins.
5. Add the grated apples and gently fold it in.
6. Line a muffin tin with silicone or paper liners and fill with the batter up to ¾ cup.
7. Bake for about 20 to 25 minutes, or until the top is golden brown and a toothpick inserted in the
center comes out clean.
8. Let the muffins cool in the pan for 10 minutes and then let it finish cooling on a wire rack.
Notes
1. These muffins freeze very well. Just zap in the microwave for a minute and you a have a delicious breakfast on the go.
2. Instead of apple pie spice, you may use the following spices
- 1 teaspoon of Cinnamon
- ½ teaspoon of Allspice
- ½ teaspoon of Nutmeg
- 2 cups of Almond Flour
- 1 teaspoon of Baking Soda
- 2 teaspoons of Apple Pie Spice
