Or maybe they are just one of the quickest and easiest ways to pack some nutrition into a breakfast of champions for those mornings when you barely had time to brush your teeth. I can go either way.
And who doesn’t love apples, right? I know you’ll love this Paleo Apple Pie Smoothie. It marries the convenience of a smoothie with the fresh, healthy appeal of apples. It’s a delightful couple. Feel free to jazz it up with collagen peptides for an extra burst of protein that won’t change the flavor at all.
Paleo Apple Pie Smoothie
Serves – 2
Ingredients
- 2 cups of Coconut Milk (or milk of choice)
- 1 medium sized frozen Banana, sliced
- 1 small or half of a large Apple ( select a sweeter variety like Gala, Fuji or Red Delicious), peeled, cored and chopped
- 4 pitted Medjool Dates
- 1 teaspoon of Apple Pie Spice
- A handful of ice cubes
- Whipped coconut cream (optional)
Instructions
- Soak the pitted dates in boiling water for 10 minutes.
- In a blender or food processor, combine the coconut milk, frozen banana, chopped apples, softened dated and the apple pie spice.
- Blend or process on high till smooth.
- Add the ice cubes and blend well.
- Pour it in to tall glasses and serve immediately with whipped coconut cream (optional) and a sprinkle of cinnamon.
Notes
- Instead of Apple Pie Spice, use the following spices:
- ½ teaspoon of ground cinnamon
- ¼ teaspoon of ground nutmeg
- ¼ teaspoon of allspice
